Have a cozy night is with this Lasagna in a cup 😍
Ingredients
1 Cup Aurora Sauce
⅓ Cup Mozzarella Cheese, shredded
2 Teaspoons Fresh Basil, chopped
¼ Pound New Aurora Rigatoni Pasta, cooked and cooled
1 Tablespoon Parmesan Cheese, grated

Directions
Preheat the oven to 400°F / 205°C.
Place a spoonful of sauce into the bottom of a wide-mouth, oven safe coffee mug. Sprinkle 1-2 tablespoons of shredded mozzarella on top, followed by some of the chopped basil and the remaining mozzarella cheese. Generously cover the cheese with  sauce.
Working in a spiral motion, place the cooked rigatoni pasta, tube end facing up, in the cup on top of the sauce. Fill the mug snuggly with pasta so that the pasta will hold its shape after being baked. Top the pasta with enough marinara to cover it. Sprinkle it with parmesan cheese. Bake for 20 minutes.
Once the pasta is baked, place a plate on top of the mug, then flip it over to unmold the pasta onto the plate. You'll want to do this as quickly as possible after removing the mug from the oven so that the cheese does not harden and stick to the bottom of the mug. Garnish with chopped basil and serve

They are a great source of plant based iron, calcium, and protein! They are also high in fibre helping promote satiety (aka fullness) post meal and bowel regularity! 💩❤️

Roasted chickpeas make for a perfect healthy snack (especially when you're craving something crunchy). They are also great on top of salad or soup! 😋

1 can Aurora chickpeas, rinsed and drained 
1-2 tbsp. Aurora olive oil 
Sprinkle of salt 
1 tsp. cracked black pepper
1 tsp. garlic powder .

1. Preheat oven to 400 F
2. Dry chickpeas as much as possible, it's best if they are no longer wet.
3. Toss in olive oil (coating all the chickpeas) and spices of choices. I like the black pepper/garlic combo. 👌🏼
4. Line a baking tray with parchment paper, place tossed chickpeas on top and bake for about 30-40 minutes. 
5. Watch to ensure they are starting to brown but not burn, and gently mix every 10-15 minutes. You want them to start looking crispy. 😋 Repost  @eatright_rd

In need of a little energy boost? Thursday were made for these delicious Mocha energy bites! 
Ingredients
1 cup Aurora pitted dates
1 cup rolled oats or Aurora almond flour or chestnut flour 
1/4 cup perugina semi-sweet or dark chocolate chips
2 tbsp ground @caffemottaofficial coffee beans or 2 tsp instant espresso
2 tbsp chia seeds
Instructions
Place dates in a food processor and blend until a paste forms.
Place date paste, oats, chocolate chipes, coffee, and chia seeds in a medium bowl. Mix by hand until all ingredients are well blended. Place bowl in refrigerator for 10-15 minutes to make mixture easier to handle.
Roll mixture into 9-11 balls. I found using 2 tablespoons of mixture made the right size of bite for my preference.
Refrigerate for up to 1 week or freeze for up to 3-4 months.

The best mid week breakfast is this Poached egg over toasted Polenta 😍 
In a large skillet heat 2 tbsp of olive oil over medium-low heat. Add the polenta slices and cook 5 minutes per side until golden and crispy. Remove from skillet and cover to keep warm. 
Using the same skillet, heat 1 tsp of olive oil over medium-high heat. Add baby arugula and continually toss until slightly wilted 1-2 minutes. Season with salt and pepper to taste.  For the poached eggs, bring a medium saucepan of water to a boil over high heat. Reduce heat to medium and add vinegar. Working with eggs one at a time, crack each egg into its own small bowl. Give the water a quick whirl with a whisk right before adding eggs. Slide each egg into the water and poach for 3-3 ½ minutes. Remove with a slotted spoon and drain on paper towel. Repeat with remaining eggs. 
To assemble, place 2 heaping tbsp of Aurora tomato sauce on a serving plate. Arrange toasted polenta on top of the sauce. Place sautéed arugula on the polenta and top with the poached egg. Season egg with salt and pepper to taste. Serve immediately

Timballo al Riso Timballo means “drum”, which is what the final product sort of looks likes. The classic versions are pasta and/or rice mixed with sausage, egg, and cheese, wrapped in a pasta or eggplant outer shell held together by the bowl or pan it is baked in. This is a dish fit for company. The served slices of timballo show just how much work you put in to dinner.

Cozy up on this very chilli evening with a cup of Perugina Hot chocolate! 
Ingredients
3 1/2 oz. Perugina Milk Chocolate
3 cups milk (you can use non-fat or a nut milk, like almond)
2-3 cinnamon sticks
pinch of ground cayenne pepper or chili powder 
Directions
Break up the chocolate into small pieces using a sharp knife. In a saucepan, combine the chopped chocolate, milk, chili pepper or cayenne and cinnamon sticks over medium-low flame.
Heat and stir until the chocolate is completely melted and milk is very hot, but not boiling, about 10 minutes.
Remove from the heat and divide the hot chocolate into mugs. Feel free to keep the cinnamon sticks in the mugs for extra flavor, or discard them. Crispy Polenta bites to finish off the week!  INGREDIENTS
1Package of Aurora  Polenta 
3 Sprigs of fresh rosemary 
1Cup Cornmeal 
1Teaspoon Sea salt 
½Cups Aurora Olive oil for frying  ¼Cups Freshly grated Parmesan cheese
Directions 
Dice the polenta in to cubes. 
Heat up some olive oil in a frying pan!
Coat the polenta with the cornmeal and shake off the excess!
When the oil is hot enough, Fry for about 3-5 mins or until golden brown!
Meanwhile, pull the rosemary leaves from the sprigs and onto a cutting board and finely chop.
Combine the sea salt and rosemary together in a small bowl.
When the polentas are done frying, drain them, put them in your desired bowl, and sprinkle some of that rosemary sea salt on top!
Grate some of that fresh Parmesan on top and enjoy!

Einkornotto alla Milanese Ingredients
4 cups boiling water (plus more if needed)
1 onion (finely chopped)
4 tbsps Aurora Extra Virgin Olive Oil 
1 cube Aurora Beef Bouillon Cube
2 cups Allessia Organic Einkorn 
1⁄4 cup white wine or cognac
5 saffron threads
2 tbsps butter (optional)
grated cheese (optional)

Directions
Soak Einkorn or Farro, covered in cold water 4-6 hours or overnight
Rinse and let drain
Put a large pot or tea kettle of water to boil
Sauté onion in oil 3-4 min. until translucent
Add bouillon cube* & let dissolve
Set timer to 25 min.
Add wheat berries & stir over med/high heat 2 min.
Add alcohol & let evaporate while stirring constantly about 1- 2 min.
Stir in 1 cup of the hot water until absorbed stirring occasionally
Continue adding water (or stock) 1 cup at a time as it gets absorbed
Stir occasionally and add saffron at any time (optional)
At 25 min. turn off heat
Let stand 20- 25 min. (at least) or until ready to serve**
Just before serving re-heat until hot & creamy (add or absorb liquid as needed)
Turn off heat, stir in butter & cheese (if desired) & serve

Recipe for 4-6 people. 🍤400g arborio rice @riso_bello @risogalloit 🍤1/2 onion. Diced. 🍤1 clove garlic. Minced. 🍤1 package saffron powder 🍤1 cup chopped peeled tomatoes (if using canned, buy better quality ones).
🍤300g peeled cleaned shrimp. I cut them into thirds. 🍤1 tbsp fresh chopped parsley. 🍤4 tbsp butter
🍤5 tbsp grated parmiggiano cheese. 🍤4 cups vegetable broth. Warm. 
1. Cook onions and garlic in olive oil. When oil is hot add rice. Toast for a minute, turning regularly, and then add 3 ladles of broth. When liquid has absorbed, continue to add broth 1 ladleful at a time and stir regularly. 
2. About 10 minutes into cooking, add saffron powder and continue to stir and add broth like always. 
3. About 13 minutes into cooking, while still adding broth, add the chopped tomatoes and parsley. Stir. It is important to add 1 ladleful at a time and wait till the liquid has absorbed before you add more liquid. 
4. 16 minutes into cooking, add butter and parmiggiano. Continue to add broth when absorbed and stir regularly. 
5. After 18 minutes of cooking, the rice should be ready. Taste to see if desired consistency. When done, shut off heat and add the shrimp. Stir so the heat from risotto can cook the shrimp. 
Serve immediately. .
