It's warm and still today as I potter around the farm hanging laundry, feeding animals, and working my way through the mountain of produce in the kitchen. I froze some figs and turned others into clafoutis, roasted beetroot with lemon pepper, grated all the zucchini and have it bagged up and ready for the freezer. Next up - the big box of lemons and potatoes (??) I got for $3 at the market. Zesting, juicing, roasting, and boiling until they're all done. It feels good to get into a rhythm again, working on the house and farm in the mornings, writing and photography in the afternoons, hanging out with Bear and doing creative stuff in the evenings, and taking breaks for rests in between it all. :-) #figs #fresh #freshfigs #fruit #clafoutis #french #frenchfood #food #foodofinstagram #foodporn #harvest #veg #veggies #vegetables #lemons #potatoes #zucchini #farmlife #countrylife #home #creative #rest

Picked up a frozen cauliflower pizza crust from @traderjoes and it was seriously yummy...topped with my homemade baby kale pesto, a bunch of greens and hemp seeds 💚💚💚!
BABY KALE PESTO
2 cups baby kale
1/4 cup extra virgin olive oil
2 cloves garlic, chopped
1/3 cup pine nuts
Fresh lemon juice, to taste, (juice of 1/2 - 1 whole lemon)
Salt and pepper, to taste 
Optional: 1/3 cup grated Parmesan cheese 
METHOD
Pulse baby kale, garlic and pine nuts in food processor until coarsely chopped. With food processor running, slowly drizzle in olive oil until fully incorporated and smooth. Season with salt, pepper and lemon juice. Mix in cheese if desired.

Homemade roasted tomato soup with a grilled cheese garnish 🍅 ALL gluten-free and dairy-free!  I had leftover Instant Pot vegetable broth in the fridge and also lots of fresh tomatoes on hand, so I decided to experiment with tomato soup. I roasted the tomatoes in the oven with onions, garlic, fresh thyme, Italian seasoning blend, red pepper flakes, Celtic sea salt, black pepper, and a little avocado oil (since it has a higher smoke point than olive oil). Heated the veggie broth on the stove with a little tomato paste and added all the roasted goodness to the broth and blended with an immersion blender. Then drizzled the soup with olive oil and a sprinkle of salt & pepper.  Since it was all plant-based and vegan up until this point, I decided to make a dairy-free “grilled cheese” as well. So I took my favorite organic gluten-free bread from the freezer and spread jalapeño almond milk cream cheese on half and homemade raw basil pesto on the other half. Then grilled the sandwich in coconut oil and cut into little cubes. Ladled the soup into bowls and garnished with the little grilled cheese sandwich cubes and fresh microgreens. It was so delicious and Mike & Conner both loved it. The perfect meal on a cold snowy day! ❄️

i feel more confident with my art rn than i ever have b4. it’s a long process, accepting the fact that i am an artist in all senses. i always thought rly stupid things about myself, like i wasn’t enough or that no 1 would understand me or take me seriously, bc quite frankly few ever did. i still feel ~not enough~ at times, i get so unmotivated... mostly bc i couldn’t go to college for more than two months w/o feelin out of place & i always thought my history of honors classes would take me to a PhD of some sort.(not to mention my mental battles due to my childhood trauma and the struggles i endured as a teenager and young adult) all my life (and even now) people tried to convince me to go to college. people tried to tell me i am “too smart” to not be a doctor or a scientist. & when i said i wanted to paint and be an artist, it was brushed off as unrealistic/impossible, from those that have both seen and not seen my art. i stressful sometimes but i know i’m happier doing things my way, at my pace. i know i will become successful in life if i believe in myself more & more each day (which i am). not everybody reaches success thru college & 
my intelligence is not “going to waste” by pursuing my dream as an artist. in fact, my intelligence shows thru my paintings, drawings, music &designs. i am not a regular person and i am over trying to convince myself that i am destined for a regular life. i am learning to love me & rly take advantage of my skills. my past struggles will take me to gr8 places, & no 1 will ever step in my way and prevent my destiny or growth ever again.

Pesto, Shrimp & Spinach Spaghetti Squash 🥗🍤

INGREDIENTS: 1 medium spaghetti squash, 3-4 TBSP pesto, ~20 shrimp, 1 medium onion, 3-4 cups spinach, 2 TBSP parm, handful of baby tomatoes, pepper, oregano, garlic or garlic powder (optional: maple balsamic vinaigrette or maple syrup + balsamic) .

INSTRUCTIONS:
1️⃣ Cook spaghetti squash upside down on a tray of shallow water at 425 for ~40-45 mins
2️⃣ Sauté onion and shrimp in a pan with a little olive oil, pepper, oregano and garlic (or garlic powder) 
3️⃣ Add spinach to pan near end of cooking. Add about a TBSP of pesto, a bit of parm and a drizzle of maple balsamic
4️⃣ Scrape out cooked spaghetti squash and add to pan. Add 2-3 TBSP of pesto, a bit more parm and a little more balsamic if desired
5️⃣ Add mixture back to squash shell and top with a little parm. Put back into the oven for about 10 mins 
6️⃣ Remove from oven and top with chopped baby tomatoes - ENJOY GUYS 🤗#pocketfulofhealth

4️⃣ Scrape out cooked spaghetti squash and add to pan. Add 2-3 TBSP of pesto, a bit more parm and a little more balsamic if desired
5️⃣ Add mixture back to squash shell and top with a little parm. Put back into the oven for about 10 mins
6️⃣ Remove from oven and top with chopped baby tomatoes - ENJOY GUYS 🤗#pocketfulofhealth
