Stuffed roasted chicken 🍗
Ingredients: 
1) whole chicken- 1
2) lemon-1 
3) Onion-1 
4) Green chilli-2
5) bell peppers-1
6) Chilli powder- 2-3tbs 
7) Salt to taste 
8) Pepper 1tbs
Method: 
1) Mix chilli powder,salt, half lime juice, pepper and mix add water to make a paste.
2) Dice onion and bell pepper. 
3) On a frying pan on low heat add oil and add onion and bell pepper and half fry.
4) wash and clean the whole chicken and pat dry.
5) apply the paste over the whole chicken and stuff the chicken with onion and bell peppers and the half lime 
6) Place in a tray and cover with foil and cook in the oven at 180 degree Celsius and for at least one hour
7) After one hour let the chicken rest for 30mins and serve.

It’s #Vegan and #GlutenFree and perfect for the the fam to enjoy between half time of the football game or after a day of ice skating outside.

The best part is most of the  ingredients are already probably in your house! 🍅 🍲 .

Winter #Minestrone Ingredients + #recipe:
1 tablespoon extra virgin olive oil
1 leek (white and light green parts only), chopped (1 cup)
1 garlic clove, minced
1 tomato, peeled and chopped (1/2 cup)
2 cups vegetable broth
1 cup butternut squash, peeled and cubed
1 15 oz. can cannellini beans, rinsed and drained
½ teaspoon balsamic vinegar
Sea salt and freshly ground pepper to taste

Directions: Heat oil in large pot over medium heat. Add leeks, cover and cook for 5 minutes. Add garlic, tomatoes and broth and bring to boil. Reduce heat to medium-low and simmer for 10 minutes. Add squash and beans and simmer for 10 more minutes. Stir in vinegar. Season with salt and pepper. Serve. Serves 1-2
.

#SundaySpecial Tried out my very good friend and popular food blogger @geetikasachdev 's #SundayRecipe #EggShakshuka. I took the liberty of tweaking the recipe a bit.

It's super healthy, low on spice and easy to cook. Here's all you need:
4 Eggs
4-5 Onions
3 Tomatoes
2 Capsicum
3 Green Chillies
8-9 garlic cloves (paste)
Coriander leaves (for garnishing)
Black pepper
Salt to taste
Olive oil or sunflower oil (2-3 tbsp)

Fry the onions till they are light brown, add tomatoes, capsicum, garlic paste, Chillies, salt and black pepper and saute them on low heat. Crack the eggs, one at a time, directly over the tomato mixture, making sure to space them evenly over the sauce. Cover the pan and allow the mixture to simmer for 10-15 minutes, or until the eggs are cooked and the sauce has slightly reduced. Make sure not to burn the pan.

The dish works superb as #breakfast, #lunch or #dinner. You can add bread slices to go with it.

2) Mix in the protein and chocolate chips
3) Stick in the fridge for about 15 min 
4) Form into small balls. Store in the fridge for up to a week!! #
I’ve been eating these as a snack post-workout and loving them! You could also use any other nut butter that you like, and add other things like coconut, flax, or chia!! #

🥦My Tupperware boxes are out, freezer bags are full of veggies and fruit and I’m excited as I’ll soon be a real off the office business gal 💁🏼‍♀️

#Veganuary who’s partaking? How’s it going?🥑🍆 id love to know! My business is focused around plant-based products because I love using them and making products available to all regardless of dietary requirements. BUT even though my diet is 90% vegan I don’t label myself vegan. I never have and never will. I do my bit to reduce the impact on the environment and I don’t believe in harming our animals for our human consumption. I buy mainly plant based milk and stick to free range eggs.👊🏼 But I need all the protein I can get for training...training for an Ironman is tough going and fuelling my body correctly for hours of exercise is important if im going to get through this....9 months to go!!.

And therefore time to share a new healthy recipe!

I made delicious new beet salad! I'm always looking for new salad recipes to switch up my veggie intake AND to avoid boredom 😝. The key to this salad is PISTACHIOS! They add an amazing flavor. 
It's so easy to make- It consists of spinach leaves, roasted beets, yellow pepper, cucumber, and pistachios! (I would add mango or avocado too if they were in season). You all know I don't generally measure my ingredients, but the dressing consists of balsamic vinegar, olive oil, granulated garlic, and a drizzle of honey. 
I had it on the side with my eggs this morning and I loved it, even a day old! 
Have a healthy week, all! Feel good!

Ingredients:

1 Goat Cheese Log
24 Marcona Almonds
Bacon, baked or pan fried

•Pit all dates and stuff them with a marcona almond and a little bit of goat cheese.
•Wrap in bacon and secure with a toothpick.
•Bake at 375  for 30 to 40 minutes in the preheated oven, or until the bacon is crisp. Turn dates over after the first 20 minutes for even cooking.

This creamy split pea soup was a hit last week, even with my 3 year old!

I sautéd an onion and two carrots (all chopped) in olive oil. I added 3 cloves of crushed garlic, salt, pepper, and granulated garlic and stirred for another minute. 
Then I added 1/4 C of dried split peas and 1/2 C red lentils. I added about 3.5 C water and brought to a boil. 
I simmered it for about 45-60 min and then puréed. 
I even fed it to my baby! 
A nice thick soup is one of the best things to warm you up on a cold winter day! When you go into the kitchen to bake something! craving for dessert... and you find the leftover rice that you did not eat last night and worry about the lunch wishing that... it shouldn't be your lunch for today.
Then your mind wanders everywhere taking you over to the cooking shows you watched and daadi maa's jugaad.
The bowl infront of you seems to be the heroic challenge and you come onto this putting your innovations and creativity.😂
I don't know what to name this dessert as... but its the simple rice kheer with some twists of white chocolate, mild flavour of vanilla, coconut milk and walnuts.
Must try with leftover rice.
Recipe:-
1 cup: cooked rice
2 cup: milk, coconut milk (optional)
1/2 cup: condensed milk
1/4 cup: sugar
3-4: cardamom 
1tsp: vanilla essence 
30 gms: white chocolate 
Cashews, walnuts, saffron and raisins.
Method:-
Boil milk until a bit creamy
Add the cooked rice
Add cashews and saffron
Also add the white chocolate, consensed milk, vanilla essense, cardomom and sugar.
Boil it for 10-15 mins on low flame.
And the kheer is ready.
Set it in the refrigerator.

Not just for Thanksgiving, this is a great side dish for any meal. Photo and recipe by: @paleomg
Ingredients:
3 pound gold potatoes, thinly sliced
1 stick of unsalted butter or 8 tablespoons of ghee
1 heaping tablespoon minced sage
1 heaping tablespoon minced rosemary
1 heaping tablespoon minced thyme (plus extra thyme for garnishing)
Flaked salt
-------------------
Directions: 🙌🏼
•Preheat oven to 375 degrees F. Thinly slice potatoes using a mandoline slicer or food processor with the slicing attachment. Arrange potatoes in any formation in a 10" cast iron skillet.
•Place a medium saute pan over medium heat. Add butter and once it melts, add sage, rosemary and thyme then cook for about 5-7 minutes, stirring continuously, until the butter has browned then remove from heat.
•Pour butter herb mixture over the potatoes, using a brush to get in the crevices of all the potatoes. Place extra thyme on top of potatoes and sprinkle with a couple hefty pinches of salt.
•Place in oven to cook for 1 hour and 15-30 minutes. Check out 1 hour and 15 minutes to see if the potatoes are completely cooked through.
•Serve immediately and eat up!

Your Sunday recipe is here!! I tweaked my old orange soup by adding 3 orange veggies!!

Instructions:
Chop up 1 onion and sauté in olive oil for about 3-5 minutes. Add in one slice of pumpkin (chopped), one chopped and peeled sweet potato, and 2 chopped and peeled carrots. Sauté for another 5 minutes. 
Add about 6 cups of chicken or veggie stock (or enough to cover the veggies), salt, and pepper. 
Cook for about 45 minutes. Purée and add basil and more salt and pepper if needed. 
Enjoy!
