Sheet Pan Balsamic Steak & Potatoes

INGREDIENTS

1 lb. baby potatoes
3 tbsp. extra-virgin olive oil, divided
3 garlic cloves, minced
1 tbsp. freshly chopped rosemary, plus sprigs
kosher salt
Freshly ground black pepper
1 lb. flank steak
1 tbsp. balsamic vinegar
.
INSTRUCTIONS 
1. In a large pot of salted boiling water, boil potatoes until tender, 12 minutes. Drain and halve if large.

2. Heat broiler. Transfer potatoes to a large rimmed baking sheet and toss with 2 tablespoons olive oil, garlic, and chopped rosemary. Season with salt and pepper.

3. On a plate, rub steak with remaining tablespoon oil and balsamic vinegar and season generously with salt and pepper. Nestle in the middle of the potatoes and scatter rosemary sprigs on pan.

4 Broil until steak is medium, 4 minutes per side.

5. Let rest, then slice and serve.

I should really post the recipe once I’ve cooked it because I usually forget what I add to it 😂 unlike baking which is a science, cooking can be much a guesstimate for me. For baking, I always have to think, if it’s minus off this amount of sugar, will the lack of solid in the mixture affect the texture, consistency and structure of the cake/cookie etc. That’s why making ice cream is a breeze for me except figuring out how to reduce sugar which is tricky because sugar is required in ice cream making..

So after @the_spg_effect had surgery, I had a list of simple dishes that would help in his recovery and according to his keto diet. Sesame ginger chicken is used in confinement cooking for new mothers. It’s so yummy and ginger is so good for the system..
.
I’ve not tried using a thermal cooker for this but I used my ceramic pot with good results. Add more ginger if you prefer or all dark soy sauce. I prefer grating the ginger as I find extracting the juice adds more punch to the dish. This takes about 20-30mins to prepare and cook. Enjoy..

GINGER SESAME CHICKEN..

INGREDIENTS:
350g chicken (can use various parts or fillet, cut into small pieces)
2 tbspn sesame oil
3 inch ginger, peeled, grated (to extract juice)
1 tbspn dark soy sauce
1 tbspn light soy sauce
1 tbspn Chinese cooking wine
½C water
Cornstarch to thicken if needed
White pepper..

1. Heat up a clay pot (I used ceramic) or skillet to high heat and add sesame oil once the pot is hot..

2. Stir the grated ginger and juice for awhile till aromatic. Add chicken and stir fry for a minute or two..
.
3. Add soy sauce, wine, water, white pepper and stir to mix..
.
4. Cover the pot, let simmer over low heat for about 10mins or till chicken is cooked and tender and sauce has thicken..
.
5. If you prefer a thicker gravy, mix some cornstarch with water to dissolve and add to chicken, stir to mix..

Optional - add a few drops of Maggi seasoning and garnish with chopped chives. Serve with rice .

Just one idea for easy dessert ... raspberries and whipped cream with vanilla. Next time I will try to prepare them with chocolate foam. Dark one.

California Grilled Chicken

INGREDIENTS

kosher salt

4 boneless skinless chicken breasts
4 slices mozzarella
4 slices avocado
4 slices tomato
2 tbsp. sliced basil
Balsamic glaze, for drizzling

INSTRUCTIONS
In a small bowl, whisk together balsamic vinegar, garlic powder, honey, oil, and Italian seasoning and season with salt and pepper. Pour over chicken breasts and marinate 20 minutes.
Heat grill to medium high. Grill chicken until internal temperature reaches 170ºF on an instant-read thermometer.
Top chicken with mozzarella, avocado, and tomato and cover grill to melt, 2 minutes.
Garnish with basil and drizzle with balsamic glaze.

A super simple no-bake berry cheesecake that tastes even better than it looks 😍😍😍

Ingredients:

250g vanilla biscuits
50g butter, melted
2 cups Liqui-Fruit Cranberry Kiwi Twist
200g strawberries
200g blueberries
500g cream cheese
1 cup icing sugar
300ml double cream
Kiwis, strawberries & blueberries to garnish

1. Grease and line the base and side of a springform cake tin with baking paper.

2. Place the biscuits and melted butter in a food processor and process until finely crushed. Spoon evenly over the base of the prepared pan. Press down & place in the freezer to set.

3. Meanwhile, place the strawberries in a small saucepan over a low heat together with 1 cup of Liqui-Fruit Cranberry Kiwi Twist fruit juice. Cook, stirring, and using the back of a spoon to gently crush the berries, for approx 10 minutes or until the strawberries break down. Remove from heat.

4. Use a fork to mash before straining through a fine sieve into a bowl, using the back of a spoon to push through as much pulp as possible.

5. Repeat the process with the blueberries.

6. Place the cream cheese and icing sugar in a food processor and process until smooth. Add the double cream and blitz once more until smooth.

7. Divide the cream cheese mixture evenly among two bowls. Add the strawberry puree to the first bowl and the blueberry puree to the second, stir to combine.

8. Pour the strawberry mixture into the base of the prepared pan.

9. Place in the fridge for 2 hours or until firm.

10. Pour the blueberry mixture evenly over the set strawberry mixture.

11. Place in the fridge for 4 hours.

12. Remove the cheesecake from the pan and place on a serving plate. Top the cheesecake with kiwis, strawberries and blueberries before serving and ENJOY!

Mexican street salad - 4 servings
For a tasty midweek meal, try our easy, gluten-free Mexican street salad - ready in just 30 minutes. .
INGREDIENTS
1 large red capsicum, quartered
2 large chicken breast fillets
1 tablespoon smoky chipotle Mexican seasoning
1 tablespoon olive oil
3 corncobs
400g can black beans, rinsed, drained
1/3 cup chopped fresh coriander
3 green shallots, thinly sliced
1 small red onion, finely chopped
2 tablespoons Praise Deli Style Lime & Chilli Vinaigrette, plus extra, to drizzle
200g cherry tomato medley, halved
1 avocado, chopped
100g feta, sliced
20g baby rocket .
METHOD
1.Preheat an oven grill on high. Place the capsicum, skin side up, on a baking tray. Spray with oil. Grill for 3-5 minutes or until the skin blackens and blisters. Transfer to a bowl. Cover with plastic wrap and set aside for 5 minutes (this will make the skin easier to remove). Peel the skin and discard. Thickly slice capsicum.
2.Meanwhile, place chicken in a glass or ceramic bowl. Sprinkle with seasoning and drizzle with 1 tbs oil. Toss chicken until coated.
3.Preheat a barbecue grill or chargrill pan on medium. Remove husks and spray corn with oil. Cook corn and chicken, turning corn often and chicken halfway, for 8-10 minutes or until chicken is just cooked though and corn is tender. Transfer chicken to a plate. Cover with foil. Set aside for 5 minutes to rest. Place corn on a chopping board.
4.Cut the corn kernels from the cobs and place in a bowl. Add the beans, coriander, shallot, onion and dressing and toss until well combined. Spoon onto a platter. Top with the capsicum, tomato, avocado and feta. Slice the chicken and place on the platter. Top with the rocket and drizzle with extra dressing to serve.

LATE NIGHT EATSSS. 😳 Cashew-Ricotta Stuffed Shells on deck because me and my man are hungryAF. 🙋🏼‍♀️🙋🏼‍♂️ Salad was spinach and red cabbage with red onion, yellow pepper, hemp seeds in hemp-avo-olive oil, pink salt and pepper.  Cashew-Riccota Stuffed Shells by my girl @vegan_organic_non_gmo, and added a bit of my own flare 👉🏼 deliciousAF and cruelty free. 🍝Ingredients:
🌿2 cups raw cashews, soaked at least 2 hours, (overnight is best)
🌿2 garlic cloves
🌿2 tbsp lemon juice
🌿1/4 cup of almond or hemp milk
🌿1 tbsp. Maple syrup
🌿1/2 tbsp dried basil
🌿1 tsp. Onion powder
🌿 tsp. Black pepper
🌿1/2 tsp. Salt
🌿sprinkle of crushed red pepper
🌿1 tsp oregano 🍝Instructions:
1. Add all ingredients to food processor
2. Process until smooth. If it is too dry, add a little more milk. Takes about 3-5 minutes to fully process.
3. Put in fridge to cool

Stuffed Shells, Ingredients: ▪️Jumbo Shells (about 25, one bag)
▪️2 (25oz.) jar marinara sauce (can use one if you don’t like a lot of sauce)
▪️1/2 cup chopped broccoli (chop tiny)
▪️Cashew ricotta 
Instructions: 
1. Preheat oven to 375. Boil the shells until cooked (mine took about 12 min.) In a separate pot, boil broccoli until soft.
2. Strain the shells and rinse with cold water so they don’t stick. Mix the broccoli into the ricotta.
3. Pour sauce into the 9X13 pan (just to cover the bottom) Fill the shells with the ricotta broccoli mix and place in pan. Pour remainder of sauce onto stuffed shells.

simply slice up + sauté a @fieldroast mexican chipotle (I think that’s what it’s called lol) sausage, along with some diced bell peppers 🌶 
place atop your prepped massaged kale, add a drizzle of tahini dressing, hot sauce (obvi) and some pickled jalapeños 🤓
enjoy this delicious bowl of fuel 🤘🏼

In a hot non stick pan add the butter and let it melt.

Saturday was a girls night in 👉🏼 movie + epic salad night, so I thought I’d make this new number from @thugkitchen 🤗 I added extra tomato to the original recipe (mine below). Only thing I’ll change next time is less Dressing, as it felt a bit ‘drowned’... besides that it was delish! (I wrote the dressing or how I’ll do it next time 😉) ✅ 3 cups chickpeas ✅ 1.5 cups cooked quinoa
✅ 3 medium tomatoes, diced ✅ 1 cup parsley, finely chopped
✅ 1/2 cup mint, finely chopped
✅ 1/2 cup dill, finely chopped
✅ 1/2 cup shallots, thinly sliced
✅ 2 cloves of garlic, minced
✅ 2 lemons, juiced
✅ 1 tbs red wine vinegar
✅ 1 tbs olive oil ✅ 1/4 tsp Celtic sea salt 👉🏼 Mash the chickpeas until there’s only a few chunky bits. 👉🏼 Add the rest of the ingredients and mix well. 👉🏼 Mix The Dressing ingredients in a jar first, shake well then pour over the salad. 👉🏼 Serve straight away of chill in the fridge. .
