So I’ve finally got around to starting my first lacto-ferment with the big bag of ‘ugly’ onions I bought recently from my local organic produce store. Since I don’t have any fancy equipment, I’ve had to experiment a bit. I have used leaves from a grapevine to cover the onions and keep them under the brine, and a small jar as a weight to hold it all down. And since that protrudes our the top of my jar I have wrapped it in some cling wrap to keep the air out. It should still be able to release carbondioxide as it ferments, which will find its way out past the cling wrap. Fingers crossed it works out well! .
I’m going to leave it sitting in this dish in a far corner of my kitchen - away from my kombucha and kefir that I also have fermenting, so they don’t contaminate each other - and check on it in a few days. .
From what I’ve gathered from all the different sources I’ve been learning from, onions tend to ferment faster than some other vegetables, otherwise I’d leave it for at least a week before checking how it’s going. I’ll know by the taste if it’s ready - if it still tastes very astringent and less sour then I’ll pop the grapevine leaves back in and let it ferment a bit in longer.

PARNSIP ROSTI - ⭐️⭐️⭐️⭐️ ————————————————————————
This recipe is borrowed from Nigel Slater's Eat: The little book of fast food, and was a step-up from mush 'snip soup.  My Sainsbos Local did not have "banana shallots", so I subbed in 2 red onions, and goat's cheese took the place of "goat's curd". Beyond that you need: 2 parsnips, 1 potato, 1-2 eggs, flour. (I decided against buying a jar of the green peppercorns when the recipe only called for using 5, so I was extra generous with the black pepper instead. I would also respectfully disagree that the onions need sugar in addition to the balsamic - would adjust according to taste.) The end dish was delish, and also worked cold as a Tupperware lunch. Nige is a tad lite on steps in this book, so a certain amount of improvisation is required. My cooking notes:

#ONIONS: I quartered my red onions and peeled apart the layers as per instruction. I think the outer layers were too large, and struggled to reduce as nicely as the slender inner bits. If using larger onions, I would at least eighth them (although I'd keep their length as it lends a lovely chutney-ish texture at the end). On a low heat, the onions took 45min to get to the desired stickiness (adding the balsamic halfway through), so I'd start there and leave 'em sweating whilst you rosti.

#ROSTIS: Having grated my snips & spud into a bowl, I added an egg and the 2tbsp flour, and mixed. I panicked that the egg was spread too thinly and wouldn't be enough of a binding agent in the pan, so I added another egg to be on the safe side. 
I also found that the mix delivered wayyy more than 6 rostis. Snap #3 shows my first rostis (diligently using a sixth of the mix for each). They were too big & compact to properly cook through without burning the outside, and I had to finish them off in the oven. I made 6 rostis with the remaining half of the mix: I'd use the size of your palm as a steer, keeping the mix reasonably loose and not making each rosti more than 2cm thick - see photo #4.
