Still recovering from a hectic holiday season? Here’s a simple and nutritious mid-week meal your whole family will enjoy! 
Zucchini pasta with avocado pesto
Recipe: 
1) Prepare your zucchini pasta by slicing 2 large zucchinis into thin strips or by using a julienne peeler. Then cook in a large fry pan with olive oil for 3-5 minutes, until tender. 
2) To make the avocado pesto, combine all ingredients:
- 1 large ripe avocado, seed removed
- ½ cup fresh basil leaves
- 2 tbsp unsalted raw cashews or pine nuts - 3 tbsp fresh lemon juice
- 2 cloves garlic, crushed
- ½ tsp black pepper
Then blend until smooth. Slowly adding 4-6 tbsp water to mixture until desired consistency is reached.
3) Toss zucchini pasta with avocado pesto and chopped tomatoes until well combined, season to taste. Serve topped with fresh basil leaves and parmesan cheese. 
Tip: Grilled chicken or haloumi would go great with this recipe.

Let’s talk Nutrimiromics and chrono-nutrition aka the effect our diet and micro RNA has on our genetic expression. 
Basically Nutrimiromics studies the influence of the diet on the modification of gene expression due to epigenetic processes related to microRNAs (miRNAs), which may affect the risk for the development of chronic diseases. miRNAs are a class of non-coding endogenous RNA molecules that are usually involved in post-transcriptional gene silencing by inducing mRNA degradation or translational repression by binding to a target messenger RNA. They can be controlled by environmental and dietary factors, particularly by isolated nutrients or bioactive compounds, indicating that diet manipulation may hold promise as a therapeutic approach in modulating the risk of chronic diseases. Particularly those with inflammation as a centerpiece. 
This also ties into chrono-Nutrition. Which means WHEN you eat is just as important as WHAT you eat. 🍃🌱🤓🧐

My Morning Smoothie to power me through todays work session. I keep my smoothies very simple. This one was three handfuls of frozen raspberries from @krauseberryfarms , a couple of strawberries and 1 and a half cups of good ol 2% milk. That is all! I find its a really easy way to get fruits into my diet and some calcium too. That is all! Nothing fancy! .

Feeling a Salmon and Coconut Rice night coming on tonight! 🐟🍚🥦This is seriously THE easiest recipe (and yes, I know I always say that, but this one really is!), plus it’s full of omega 3s to keep your brain and heart healthy 😊

Recipe (serves 2): 1/2 cup basmati rice
1/2 cup light coconut milk
1 cup water
2 handfuls greens such as bok choy, snow peas, brocollini or asparagus
Salt and pepper 
Sauce:
2 teaspoons soy sauce 
1 tablespoon sweet chilli sauce 
2 teaspoons sesame oil
1 tablespoon lime juice 
2 tablespoons water 
Method:
Add rice, coconut millk and water to a saucepan over medium heat. 
Place salmon fillets in a bamboo steamer and place on top of saucepan. Season with salt and pepper. Cover and cook for 10 minutes, then add greens to steamer and cook, covered, for another 5 minutes or until rice is soft and all liquid is absorbed, salmon is just cooked through and greens are tender. 
To make sauce, mix all ingredients together in a small bowl and microwave on high for 30 seconds. 
To serve, divide rice between two plates, top with salmon and greens and pour over sauce. •
