This time of year, the heat and garden’s bounty make me come over all Med ☀️☺️. Old-school, perhaps - but there’s a lot to be said for ancient cuisines that know how to make the most of minimal and simple ingredients (and veg in particular). That unremarkable-looking dun sauce in the foreground is the remarkable 4-ingredient flavour bomb that is #anchoïade (if you’re a misguided anchovy-hater, avert your sorry eyes now ⚠️): cured anchovies, olive oil, and our garlic and  home fermented wine vinegar - recipe basics👇🏻. I love this time of year, when it becomes easier to "shop" almost entirely from the garden. But my kohlrabi is a reliable stayer all year round, and edible from shoot to root (nearly!). Having made stock from our Festivus turkey bones, and with some of the turkey skin pangrattato kicking around in the freezer, this little kohlrabi risotto’s just the ticket for #meatlite Monday. #meatfreemonday: twice baked mushroom and smoked cheddar soufflés, sitting on large roasted field mushrooms. I suppose I do have a yen for gutting vegetables, making twice-baked soufflés out of their innards with our surfeit of backyard eggs, and then stuffing the soufflés back into the veggie vessels for a second bake (see my earlier post of disembowelled mini pumpkins ☺️). It kinda makes the dish feel like a more substantial main course - albeit not a heavy one - and allows you to enjoy the entire vegetable without weighing down the soufflé with too much heft. In this case, the soufflés were flavoured only with the chopped mushroom stalks - and a substantial amount of smoked cheddar 🧀💛😍. The mushroom caps were tossed in confit garlic olive oil, and roasted along with the soufflés for their first bake. Then, at dinner time, the twain were reunited under a veil of cream, a little more smoked cheddar, and panko breadcrumbs for the crispity (swipe 👉🏻 for more some process pics). Served with just a light salad of cos and chive flowers from the garden, toasted walnuts, and a lemon and walnut oil dressing 🍄🥚🧀⠀

An experiment with semi-success 😣 (including trying to post this!): Mushroom, miso and wakame tart, on a buckwheat, olive oil and nori base. I tried the tart base to see whether it would work as a gluten free, vegan option - not because I suffer from gluten or animal-based food intolerance - but because I like to have the ability to cater for those who do. The “semi-successful” part:  the shell actually worked out well.  But though they say that a good carpenter doesn’t blame his tools - I do blame my frickin’ baking sheet for warping on me in the oven, spilling custard over the sides of and under the tart tin, and putting paid to any hopes of releasing the tart cleanly 😠. I would say it was 💔breaking - if life hadn’t already taught me not to sweat the small stuff 😉. Luckily the delicious filling saved the day!  With a raw Swiss chard, beet and kohlrabi leaf slaw, dressed with rice vinegar, sesame oil and black sesame seeds. A delicious superfoodie meal for #meatfreemonday 💪🏻🇯🇵🍄💚⠀

I can’t believe it’s not mutton ☺️: Roast fennel and pine nut polpettone, on a spicy fennel seed and peperoncino tomato sauce. I just love the Sicilian pairing of fennel seed and dried chilli, and - thinking it would work well with the roast bulb fennel #meatlessballs - slightly adapted this @jamiemagazine recipe to switch up the heat a little. The combo of fennel, pumpkin seeds and pine nuts gives a wonderful toothsome texture to the polpettone, and the addition of pecorino (it’s what I had - instead of parmesan) to the mix, ups the umami factor of this old favourite to 💯. Do try these when you next have a bulb of fennel in the house - even when it’s not #meatfreemonday - you’ll be making them again and again! 👌🏻⠀

Black bean stuffed, roasted #spaghettisquash:  we’re lucky enough to still be dipping into last season’s squash! It was the first time I’d grown them, and I’m delighted with how prolific the plants were, and how well the squash keep. Also - they were massive - each fruit yielding substantial meals for the two of us. On that note - I’d best get some seedlings on the go again soon…🤔💛🌱 This one has been roasted, and is stuffed with black beans, 🌶 , feta, and coriander, and the halves topped - respectively - with the squash’s own roasted seeds, and pecorino. Not my ouma’s groenboontjiebredie (grandma’s green bean stew). Green bean stew is such nostalgia food for me, pure Winter comfort.  But the fairly plain - albeit well loved - version that my family makes is not how I imagine it began, nor how I expect it is cooked in the Bo-Kaap today ☺️. Many traditional Cape dishes originated from ingredients available locally,  flavoured by what was travelling along the spice route, and falling somewhere on a taste spectrum that pleased the cooks and the eaters - from Europe, Asia, and Africa. The history surrounding the origin of these foods was, no doubt, unhappy. But I can't be unhappy about Cape Town's beautiful melting pot of people and food today. And I do like to spice up my groenboontjiebredie - based on lamb or mutton, green beans and a little potato - with spices that please me now, and that I think could have found a place in this stew at the outset: including lots of cumin, green chilli (1-2 de-seeded - or more, left whole and pierced with a sharp knife), and fresh coriander.  This version used lamb off-cuts - all we needed to add just the right amount of meaty flavour, and silkiness from the bones.  A taste of the Cape of Good Hope on our plates.

Boston Baked Beans - so much more than the sum of its humble parts.  I hesitate to say how ardently I love this dish. Hard to sexy up for a photograph, admittedly - but then it is built for comfort, not for speed 😉. This recipe (adapted from the @rivercottagehq Meat Book) is one of my favourite Winter one-potters, for being so incredibly tasty and rib-sticking.  I always use a whole smoked ham hock instead of bacon, though - in this case, a home cured and smoked hock off a free range pig we bought from a local farmer last year (@coltishpork) - slowly cooking it with the soaked beans, then shredding it from the bone, stirring it through, and placing the mix back in the oven for a final hour or so.  I skip the brown sugar - though definitely not the small amount of dusky treacle!  Lately, I felt a crumb topping called for, and an astringent green herb sauce to lift things a little.  Of course the smoky hock bone and skin have been salvaged and frozen for another outing in a soup - #wastenotwantnot! On our table, we eat free range, preferably local meat, relatively sparingly.  So we are still slowly making our way from the nose to the tail of that one (admittedly very big) 🐖 that we bought a year ago, making the most of every scrummy skerrick!⠀

Kohlrabi Caldo Verde - an ode to a plant I ❤️: So I was recently rabbiting on about plants I’m devoted to, for being hardy multitaskers that also deliver in the taste and nutrition departments (weird much…? 😊). Well, brace yourselves - for there is more!  Kohlrabi is currently my star performer, and this soup is one example of its versatility. It was time to uproot some vigorous monsters (that, by the way, happily shrug off the frosts and continue pushing out new bulbous stems from old growth) - but I couldn’t bear to waste what I knew was a potential #lowcarb, cruciferous, inulin-laden feast. For a riff on caldo verde, I replaced traditional kale with the kohlrabi leaves;  and potato with the somewhat starchy over-the-hill kohlrabi stem (lovely, when simmered long enough in home made #bonebroth / stock 😉). Topped with some of our smoked #kielbasa - fried, and a little garlic, smoked paprika and sherry vinegar oil - a good send-off for this nose-to-tail powerhouse of a vegetable.⠀

Sausage Socca: I love making socca because, for all it being gluten, grain, dairy and egg free, it is not only very tasty on its elegant own (try it with an icy dry rosé, à la provençale) - but, if you were to go off-piste, it can also serve as a customisable base for your favourite toppings. This version incorporates rosemary from the garden, a grating of pecorino, and bits of crumbled “flopsausage” - those odd-shaped little fellas left over after shaping links, the rebellious ones that split their seams, or mixed sections of farce resulting from the transition between differently-flavoured sausage batches.  If flopsausage doesn’t get fried up and applied to face immediately on the day of sausage-making, it’s frozen for snacks like these, where just a smidge of something sausagey is required  This socca worked well with a final flourish of mustard-hot mizuna, blithely thriving in the back yard despite the recent frosts.

Snoek is traditionally paired with baked sweet potato. But for this snack, I've made them fritter friends - with a little chickpea flour, fresh coriander, garlic, ginger, and green chili. Served with a garlic-hot lemon and coriander yoghurt. I wouldn't judge if you were less carb-conscious, and opted for a Mrs Balls chutney mayo instead, or considered slipping both into a bun 😉. By no means trad, but a delicious mashup nonetheless 🐟
