Making a #breakfast adaptation of #chocolatecoveredstrawberries (one of my favorites desserts) makes me feel much #happier and #loved and helps me power through the many hurdles of the day! Show #love to yourself as many times as possible during the day through your food, your activities, and a mindset of loving yourself entirely and  unconditionally.  Tough days get easier when you realize that you already work really hard and you always deserve more love from yourself! Happy friday!! Recipe: 3 minute prep time.  1 cup of #vanilla #almondmilk , 1 tbs of #macapowder , 1/2 cup #oldfashionedoats, 1 tbs of #chiaseeds microwaved for 2 minutes. Sofa day watching food network and reruns of Rick Stein's 'Mediterranean Escapes' and becoming very hungry for some lovely veg via Greece. Briam(summer baked vegetables) a medley of waxy pots, courgette, aubergine coins, red onion wedges and tomatoes layered with dill and parsley, lots of olive oil, salt and passatta. Baked slow and low(160C for 1 1/2) until everything is collapsed and soft and a melting mass of goodness. Hands up if you fancy a bowl of this creamy fennel & leek soup?! 🙋🏻‍♀️ this has been my lunch for the past couple of days & I’m surprisingly not bored of it yet. It’s sweet, slightly aniseedy (but not overpoweringly so) & comforting - like a hug in a bowl. I love that in addition to the fennel & the leek there’s half a cauliflower & a whole aubergine snuck in there too. Talk about a veggie hit! Oh & the creaminess comes from coconut cream rather than dairy so it’s perfect for #vegans too. It took me all of 15 minutes to make and about 3 minutes flat to devour it. If you have this on your #iqs8wp this week don’t skip it, it’s worth trying (even if you’re not a huge fennel fan). Well, I’m heading back on the laptop as we’ve had some crazy winds which have blown down some trees & blocked the train lines, meaning train delays. Will venture into London later this morning when the disruption has cleared but at least I know I have more of this to look forward to later today 💚 Oh & I left the soup splodge on the bowl bc let’s keep it real, I can never do a pretty bowl of soup that hasn’t got some kind of stain or splash on it 🤦🏻‍♀️ Have a great day everyone

Incredibly versatile it can be roasted, grated for salad, 'souped' and even makes a great cake. Tasmanian beetroot is available across the year so a fabulous staple veg to include in your #vegitup repetoire. Here we have simply grated it and combined with a heap of fresh herbs, plus walnuts and a middle eastern type dressing with EVOO, lemon, pomegranate molasses and rosewater.
