Have you ever seen the star of the persimmon? Or even wondered what a persimmon is. You've seen them in the market - they're sort of shaped like a tomato but aren't... Fruit? Vegetable? Their latin name means “divine fruit or food of the gods”. These fruit grown on trees and are in season (in the northern hemisphere) from October through February. Some varieties resemble a tomato in shape, (Fuyu) and can be eaten while they are still hard. Others (Hachiya) must be fully ripe (jelly like and feel like a water balloon) before eaten. These are astringent and are bitter if consumed before they reach their peak. There are some cros/sub breeds that look like the Hachiya but can be eaten when still firm or slightly soft. It’s best to ask your grocer/farmer about the variety you are buying to be sure. 
Persimmons taste a bit like apricots, pleasantly honeyesque sweet. Because of their deep orange hue, you can be certain of antioxidants along with vitamins (A 55% of daily value & C 21% of dv) and minerals. Antioxidants like beta-carotene, lycopene, lutein and catechins offer the body a way to fight free radicals. These fruit have a hefty amount of fiber (6g) per serving. 
How do you enjoy persimmons? Again anything goes - try one of these: eat them raw, add them to salad, cut them into your smoothie bowl, eat them in slices like an apple, add them to your next cheese tray, broil them and add some goat cheese and drizzle of honey for an appetizer, cut them into salsa, bake them as a crumble or crisp. This dish is the definition of simplicity. Nothing can get more simple than these roasted vegetables. The vegetables are roasted in some olive oil and sprinkled with nigella seeds. Just the pure flavour of vegetables and nigella seeds makes this dish irresistible. 
Also, thank you @varai_propstore for these lovely enamelware. They are a keeper. 😍

INGREDIENTS
Carrots
Beetroot
Radish
Olive oil
Nigella seeds

DIRECTIONS
Preheat the oven to 200°C.
Toss the vegetables in olive oil and then place them on a baking tray. 
Do not over crowd the tray.
Bake in preheated oven for 20 minutes, flipping the vegetables after 10 minutes.
Once done sprinkle some nigella seeds and serve immediately.

Notes: 
1) I have not used any salt or pepper as I did not want to temper with the sweetness and natural flavour of the vegetables and trust me they taste better this way.
2) Nigella seeds is a must as it's flavour enhances the dish.

Homemade Energy Bars:😍 So what does it take to make the ultimate homemade energy bar? They need to be packed with protein and contain tons of nutrition, but most of all…they should be delicious! This recipe makes 10 bars:
——Ingredients——
1 cup oats
1/2 cup pumpkin seeds
1 cup almonds
1/2 cup buckwheat groats
1/2 cup raisins
1/2 cup dried cranberries
1 cup dried apricots
1/4 cup maple syrup
1/4 cup water
——Method——
1. Preheat oven to 180°C.
2. Line a large baking tray with greaseproof paper. Spread out the oats, pumpkin seeds and almonds evenly on the tray, then roast for 10 minutes in the preheated oven.
3. Meanwhile, blend the apricots, maple syrup and water together until smooth, then transfer to a mixing bowl. Next, add the buckwheat groats, raisins and cranberries to the mixing bowl.
4. Remove the baking tray from the oven and leave to cool, but make sure the oven remains switched on. Once cool, transfer the roasted oats, pumpkin seeds, and almonds to the large mixing bowl.
5. Line an 8” x 8” square cake tin with greaseproof paper before transferring the mixture into the tin. Smooth over the top using a piece of greaseproof paper, pushing down to make sure the mixture is compact. It's important you press down as firmly as possible to ensure the mixture is compact, which will prevent the mixture falling apart when you slice them into bars.
6. Place the cake tin in the oven for 20 minutes.
7. Remove the cake tin from the oven and leave the energy bars to cool completely.
8. Take the energy mix out of the cake tin and slice into 10 energy bars. .

Happy Sunday🙌💝
I am so happy to have a slower day, this week was a hard one for me, lots of tests to study for and an essay to write.
I am loving what I am learning, definately passionate about nutrition.

Happy Sunday🙌💝
I am so happy to have a slower day, this week was a hard one for me, lots of tests to study for and an essay to write.
I am loving what I am learning, definately passionate about nutrition.

For today's breakfast, I boiled an organic free range egg, steamed some asparagus and some grapefruit.
I dont know if I mentioned it before but I love grapefruit.🙌🌈
