Need some brunch inspiration for this weekend? How about making a wickedly delicious Benny Breakfast Salad 😍🍳🥑🍃 with my favourite dairy free "Hollan-yays" sauce! Who's in? 🙋🏼🙋🏼‍♂️🙋🏼🙋🏼‍♂️ Benny Breakfast Salad:
2 cups arugula
1/2 avocado, sliced 
1/4 cup ham, cubed OR bacon, crumbled 
1-2 eggs, cooked to your preference (poached are my go to)
1 tbsp green onions
✨
"Hollan-yays" Sauce:
1 cup cashews, soaked and drained 
1/2 cup + 2 tbsp water
2 tbsp grapeseed or olive oil 
2 tbsp butter flavoured or refined coconut oil 
2 tbsp lemon juice 
1 tsp apple cider vinegar 
2 tsp nutritional yeast
3/4 tsp chili powder
1/2 + 1/4 tsp salt
1/4 + 1/8 turmeric powder
1/8 tsp pepper
✨
Layer salad ingredients in order from top to bottom. Combine all sauce ingredients in a high speed blender or food processor and blend on high until smooth. You can add more water to make a thinner sauce if you like. Transfer to a sauce pan and heat over low. Drizzle over your benny salad in generous quantities 👍🏻🤤

I finally made myself pickle some turnip!! And it was SO easy! 🙌
Originally a staple condiment in the Middle East, usually eaten with falafel or gyro, I plan to top my salads and rice bowls with this vibrant, beet stained goodness💜

Turnip is an excellent source of fibre, Vitamin C, folic acid, and manganese to name a few. 
This will take a week on the counter before it's ready to eat and I cannot wait.
