Little man has taken sausage (cooked yesterday) with leftover onion gravy, veg and a small jacket potato to the Childminder’s for tea today. It wasn’t worth a picture so have my food pack for a day at work instead! I often grab as I’m on the go so I’m trying to be as organised with my own food as I am with Jacks, purely so I eat healthier and get less tempted by the office biscuits/cakes. For breakfast I had porridge and banana. Snack was mixed fruit. Lunch was Mediterranean flat bread with hummus and salad. I confess to a bag of crisps and some of my colleagues mini eggs too though so not quite as healthy as I’d hoped 🙈 #mummyeats #healthyfood #eatarainbow

Nothing like some fresh air and a brisk walk in the middle of the afternoon to increase those energy levels, clarity and serotonin levels. Look at that blue sky ☀️ ⛅️ I was at work all day yesterday which means I spend the following day indoors writing up plans for my clients. Sometimes it can be hard to pull myself away from my work especially when I have a Small timeframe before the kids come back from school but I tell you 30-40 minutes of walking and fresh air makes me so much more productive that it’s time well spent and I’ve managed to get some forest therapy. If you’ve not seen my previous posts there have been studies done showing that spending time in nature reduces levels of cortisol and therefore decreases stress levels. I’m sure you have all gone out for a walk or run and come back feeling better ....

Breakfast bowl of yumm set out on a winter’s morning: kale, sweet potato, quinoa, & poached egg, all drizzled with sesame oil. I sprinkled S&P, smoked paprika, turmeric & black sesame seeds for a pop of flavor. Go on, eat a rainbow on a whiteout day!

Lunch today is 11-veggie & lentil soup 🥕🍅🥦 lentils are an excellent source of plant protein and are considered a heart-healthy food because of its cholesterol lowering properties. •

Dice a medium yellow onion and mince four cloves of garlic. Chop 2 carrots, 1 zucchini, 1 squash, a handful of cauliflower into bite-sized florets, 2 small turnips & a handful of green beans into roughly the same size. Cut a half of a bunch of kale into thin ribbons. 
In a large stockpot, heat 1 TBSP of olive oil over medium-high heat. Sauté onions and garlic until fragrant and translucent, about 3-5 minutes. Add the rest of the veggies except for kale and sauté, stirring occasionally for about 10 minutes. Sprinkle with salt, pepper and 1 TBSP of dried basil. 
Add one 15 ounce can of diced tomatoes (including juice) and 2 cups of vegetable stock. 
Bring to a boil and then simmer for about 15 minutes. Add a large handful of baby spinach, chopped kale and 1 cup of cooked lentils. Simmer 5-10 minutes more. Serve with Parmesan cheese and enjoy with the ones you love ♥️

I'm off work today due to a severe allergic reaction, the doctor I saw this morning thinks I have a mustard allergy (only I could be allergic to a condiment! ) I'm now waiting for an appointment with the allergy clinic for testing and an epipen. Didn't realise mustard crops up in bloody everything so it's homemade for me from now on. Made this for my lunch, definitely no mustard involved. Lettuce, spinach, beetroot, cherry toms, hummus and leftover baked sweet potato.

Mixed greens, avocado, carrots, sunflower sprouts, red pepper, hummus and seeds. Absolutely delicious. .

The food at Tulum beach really is amazing, I am in my element with so much fresh produce. We had this @rawlovetulum on the beach, a beautiful vegan restaurant with an amazing menu. I have lots of inspiration to make my own versions when I get home, as I do like to eat a vegan diet some of the week👍🏼.

Of course we are mixing it up and going for the more traditional Mexican options too as it’s all about balance....right! But these options aren’t so healthy so I’m not showing them off 🙊. Did I tell you about the nachos and the fajitas!???
