*||* 🌟 El Xató, una amanida amb nom propi. Amanida tradicional catalana que rep el nom de la salsa que l'amaneix. Encara que "la paternitat" del plat es la disputen diverses poblacions del Penedès i el Garraf, el que si està clar és que neix en una zona vinícola i és un plat d'hivern. Escarola (Cichorium intybus), tonyina, bacallà dessalat i anxoves, que en aquest cas vaig canviar per pebrot escalibat, amanit amb la salsa xató, ametlles, avellanes, alls I tomàquets escalibats, ñora (Capsicum Annum L, varietat "Bola"), pa, vinagre i com sempre OOVE.

Aunque "la paternidad" del plato se la disputan varias poblaciones del Penedes y el Garraf, lo que si está claro es que nace en una zona vinícola y es un plato de invierno. Escarola (Cichorium intybus), atún, bacalao desalado y anchoas, que en este caso cambié por pimiento asado, aderezado con la salsa cható, almendras, avellanas, ajos y tomates asados, ñora (Capsicum Annum L, varietat "Bola"), pan, vinagre y como siempre AOVE.

Although "the paternity" of the dish is disputed by several populations of Penedes and Garraf, what is clear is that it is born in a wine area and is a winter dish. Escarole (Cichorium intybus), tuna, desalted cod and anchovies, which in this case I changed for roasted pepper, seasoned with the "xató" sauce, almonds, hazelnuts, garlic and roasted tomatoes, ñora (Capsicum Annum L, variety "Ball"), bread, vinegar and as always EVOO -------------------------------------

At Sants, Cataluna, Spain

“Atascaburras”, a traditional Spanish dish from the “Manchego” area. It’s prepared by mixing potato purée with desalted cod, garlic and paprika, accompanied with walnuts and occasionally hard boiled eggs. Typical in “Albacete” and “Serranía de Cuenca” and is usually consumed during winter.  Here is a modernized version of this dish with a few tweaks here and there, made during one of my classes in @escuelabellart with a help of my classmate @aguiloadria . Delicious 🤤 .
