Slow roasted lamb shoulder #maryberry style. Cooked over brown onions with chicken stock. Absolutely delicious. Served on a veggie ragu. The pan juices reduced to thicken with a solid glug of medium dry sherry added. 
We haven't had lamb for months. It was so tasty and tender.

Zubereitung

Heizen Sie den Backofen auf 180 Grad (Ober-/ Unterhitze) vor. 
Trennen Sie die Eier und schlagen das Eiklar zusammen mit dem Salz steif. Die Eigelbe zusammen mit dem Xylit, Mandelmehl und der Milch vermischen. 
Die Vanilleschote längst halbieren und das Mark mit einer Messerspitze raus kratzen. Das Mark, Backpulver und Guarkernmehl zur Eigelbmischung geben und gut verrühren. 
Die Zartbitterschokolade klein hacken und zusammen mit dem Eisschnee unter die Masse heben. 
Legen Sie ein Backblech mit Backpapier aus und formen aus dem Teig 12 Cookies. 
Backen Sie die Cookies für 10-15 Minuten bis sie leicht goldig werden.

Im surprised at my energy level. Pretty constant 
Also surprised at how little I’m eating. Lunch and dinner is pretty much my meals and I’m not hungry.

Pain level is fairly good too. But I’m also on some very effective biologicals so can’t say how much this is effecting the inflammation.
